Opening Spring
Starting its life as a spaghetti and cacio e pepe pasta pack delivered across Sydney by the Love Tilly Group’s Ragazzi Wine + Pasta during lockdown, Fabbrica opened its first bricks-and-mortar deli and restaurant Fabbrica Pasta Shop on King Street in 2020, which was followed by Fabbrica Pasta Bar in Balmain’s historic Exchange Hotel in 2023.
Making everything in-house – from all our different pasta shapes to sauces, daily baked sourdough and cream-stuffed Roman buns – our restaurants are known and loved for their mafaldine with prawn and ‘nduja, hot honey-topped zucchini flowers, daily rotating sandwiches and Italian ode to schnitzel: cotoletta made with pork from regenerative NSW farmer Tathra Place. Beverages play no second fiddle, either, with wine lists showcasing our favourite minimal-intervention winemakers from across Italy and growers using native Italian varieties here in Australia. Our range of pasta packs, which include the much-loved spaghetti cacio e pepe, trottole with pork and fennel sausage, and rigatoni with slow-cooked wagyu and red wine ragu, can now be found at retailers across Australia.
