There’s something that feels a little fancy about whipping up a cocktail in the comfort of your own home. You could go to a bar, sure, but why would you when you can do it all yourself? This summer, we’re leaning in our mixologist era, which means trying our hand at a few new cocktails. There will be no smoke guns or bubble makers here though — these are low-fuss recipes made with spirits and tools that, if you don’t already have, are easy to get your hands on at Chatswood Chase. Plus, they make the perfect icy refreshments for when friends drop by on scorching afternoons unexpectedly, as friends often tend to do in summer.

Here, we’ve got a summery take on a happy hour classic, a spritz for anyone over Aperol and a mocktail so good, you won’t miss a thing. Read on for the recipes and where to find everything you need at Chatswood Chase.

Grapefruit Negroni

1 shot each of gin, sweet vermouth and Campari (all from Vintage Cellars) 2 shots grapefruit juice (from LoSurdos)

Ice and a wedge of grapefruit, to garnish

Place gin, vermouth, Campari and grapefruit juice in a cocktail shaker (from David Jones) and stir with ice until cold. Strain over fresh ice into a tumbler (from Wheel&Barrow) and serve with a wedge of grapefruit. Makes 1.

Hugo Spritz

½ shot St-Germain (from Vintage Cellars)

1 mint sprig

4 shots Prosecco 1 shot soda water (from Coles) Mint sprigs and a wheel of dried lemon (from Scoop Wholefoods), to garnish

Muddle St-German and mint sprig in the bottom of a wine glass and allow to infuse for around three minutes. Add ice, Prosecco and soda water and stir to combine. Garnish with mint and lemon. Makes 1.

Gin(ger) and Juice

3 shots of Radiant Glow juice (from Cali Press) 2 shots Organic Lemongrass and Ginger Tea (from Scoop Wholefoods), brewed and chilled 2 shots Remedy Ginger and Lemon Kombucha (from Coles)

Ice cubes, plus extra to serve

Slice of fresh ginger and lemon, to serve

Place juice, chilled tea and kombucha in a wine glass (from David Jones) with ice and stir to combine. Top with a slice of ginger and lemon and serve. Makes 1.
